Ham & Cheese Salad

Here's #2 in our week of fast Ham & Cheese meals. Throw this salad together in 4 minutes flat! Turn this Ham & Cheese classic into a perfectly portioned lunch. 



Ham & Cheese Salad

1 1/2 c. Lettuce
3 slices Ham deli meat cut into cubes
1/4 c. Shredded Mozzarella cheese
drizzle of Ranch Dressing

Place all ingredients in a bowl and eat up! DELISH!

Ham & Cheese Lunchwrap

My awesome brother-in-law has challenged me to make college friendly recipes. He said, in college he doesn't have time to make 30 minute meals. Between school, work and play he needs something that is made in 10 minutes and under. Well Jared, this week is for you! I've made 5 recipes that use  the same 2 main ingredients, Ham (lunchmeat), & Shredded cheese. Five fast recipes for the college student or the average person in a hurry. Here is the first!

This Ham & Cheese Lunchwrap is lovely. Not only does it taste delicious, but it's made in under 2 minutes! AWESOME! Fast, easy and yummy; the perfect combination.


Ham & Cheese Lunchwrap

1 tortilla
2 slices of Ham
1 leaf of lettuce
1/4 c shredded mozzarella cheese
Drizzle of Ranch salad dressing


Layer your lunch wrap:

Tortilla
Lettuce
Ham
Cheese
Ranch

Roll up and eat! Delish!

Chocolate Chip Banana Bread

Chocolate Chip Banana Bread.
The second we finished this loaf, my family asked where the other one was, because this went down WAY TOO FAST!
SCRUMPTIOUS!
This is definitely worth the wait!



Chocolate Chip Banana Bread

1 1/2 c. Flour
1 c. Sugar
1 tsp. Baking Soda
1/4 tsp. Salt

2 Eggs - slightly beaten
1/4 c. Oil (or Soft Butter)
2-3 Ripe Bananas mashed (about 1 cup mashed bananas)

3/4 c. Chocolate Chips

Preheat oven to 350. In a medium mixing bowl combine flour, sugar, baking soda and salt. Then add the eggs, oil and bananas. Stir until well combined. Fold in the chocolate chips.

Place batter in greased and floured loaf pan.

Bake at 350 for 60-80 minutes or until inserted toothpick comes out clean.

Pom Pom Chicks

Need a quick craft for you and your little one to make for Easter?
How about some easy Pom Pom Chicks?
These chicks have watched movies with us, eaten with us and played with us. My kids LOVE them!
The supplies were given to me for free by CraftProjectIdeas.com. We love their craft supplies! These Pom Pom Chicks are one of our favorite crafts to date.


Supplies

Green Fuzzy Sticks (Pipe Cleaners- Nest)
Yellow Poms (Body)
Tri- Beads Rainbow (Beak)
Adhesive Wiggly Eyes (Eyes)
Hot glue

Take one Yellow Pom and let your child attach the adhesive Wiggly Eyes. Drop a dot of glue and add the orange Tri-Bead for the beak. Glue the other 2 Poms under the "head pom." Repeat until all chicks are made. 
Take the green fuzzy sticks and make a nest.

What a cute nest of chicks to bring in spring!

Dutch Pancake with Buttered Apples

I'm making this for our Easter Breakfast. It's a little fancier than our usual cereal, eggs and toast but it's SUPER easy to make! My little 4 year old and I made this together, we had a blast.


Dutch Pancake

Preheat oven to 425'

In a medium bowl whisk together:
4 Eggs
2 tsp. Olive Oil
1 c. Milk

Add:
1 c. Flour
1/2 c. Sugar
1/4 tsp. Cinnamon

Whisk together until smooth

Pour into a greased 9x13 pan.

Bake at 425' for 15-17 minutes or until puffy and lightly golden brown. 

While the Dutch Pancake is cooking, prepare the Buttered Apples.

Buttered Apples

Peel and slice 2 medium/large apples.

In a skillet melt 2 T. Butter. 
Add in the sliced apples. 
Saute on medium/high heat, stirring constantly until the apples are tender & lightly browned.

Cut the Dutch Pancake and serve with the buttered apples on top!

3 Ingredient Crock Pot Raspberry Chicken

3 Ingredients, 3 hours.
Only 3 ingredients make the main dish of a meal, and only 3 hours in your crock pot.
No tricks, it's as easy as 1, 2, 3.


3 Ingredient Crock Pot Raspberry Chicken

4 Boneless Skinless Chicken Breasts - (filleted to be thinner) (thinner = quicker cooking)
1 c. Raspberry Preserves
1 c. Russian Salad Dressing (the brand I use is Wish Bone if that helps;))

Place filleted chicken breasts in a greased crock pot. In a small mixing bowl combine preserves and dressing. Pour the mixture over the chicken. Cook on LOW for 3-4 hours or until chicken is cooked through.

Serve over brown rice! DELISH!

Base to Any Bread Pudding

Are you a bread pudding lover? US TOO! Sometimes we make them big and sometimes we make them small. We add different fruit, berries or nuts each time but we always keep our tried and true "Bread Pudding Base". 
Make a 9x13 or an 8x8, I've got the recipes covered for both! ;)
Dessert time here we come!


Bread Pudding Base

Our favorite "Add Ins"
Blueberries - Raspberries - Crasins - Rasins - Strawberries - Peaches - Cherries
Walnuts - Pecans - Macadamia Nuts - Cashews
Add some of your favorites! The sky is the limit!

8x8 Bread Pudding

(stale/ old bread cut into cubes to fill the 8x8 pan)
3 T. Melted butter
Pour the melted butter and toss with the bread cubes. Place the "buttered bread" into a greased 8x8 pan. (you can add berries or nuts into the pan before you pour over the milk/egg mixture)

1 1/2 c. Milk
1 tsp. Cinnamon
2 Eggs
1 c. Sugar

Mix together the milk, cinnamon, eggs and sugar. Pour over the cubed bread. 

Bake at 350 for 45-55 minutes. Give the pan a little shake and make sure the middle isn't giggly. Insert a butter knife- it should come out clean. If not, keep cooking and check every 5 minutes.

Crock Pot Beef Meatloaf

I was telling my niece one day that I was making one of my favorite meals for dinner- Crock Pot Meatloaf. I told her I had given her the recipe as a graduation gift and she could look it up and make it too! 
She said, "But, I don't have ground turkey only ground beef, so I can't make it." 
I said, "You do know that recipe works for both ground beef and ground turkey?!"
She was floored.
So, here it is. This is for those of you who didn't know, my Crock Pot Meatloaf recipe can be used for both ground beef and ground turkey! Check it out!




Crock Pot Meatloaf 

1 lb. Ground Beef (or Turkey)
1/4 c. Rolled Oats
1/4 c. Dehydrated Chopped Onion
8 Saltine Crackers- smashed
1 tsp. Salt
A few Dashes of Pepper
2 tsp. Worcestershire Sauce
2 Eggs

Mix all ingredients in a large bowl until well combined. In a greased crock pot place the meat mixture and shape into a loaf with your hands. Don't let the meat touch the sides of the crock pot. Spread an even layer of ketchup on top of the meat. 

Cook on HIGH for 3 hours or until middle is not pink.
Slice and serve.




We served this meatloaf with one of our favorite side dishes

Easy Triple Chocolate Bundt Cake

In the mood for chocolate? I don't know about you, but I'm ALWAYS in the mood for chocolate!
This Easy Triple Chocolate Bundt Cake is made with CHOCOLATE! Chocolate cake mix, a chocolate pudding package, and chocolate chips, plus... the chocolate drizzle sends this over the top - DELICIOUS!
We are making this again SOON! Just looking at this picture makes my mouth water.



Easy Triple Chocolate Bundt Cake

1 Chocolate cake mix - (I used Devil's Food)
1 large pkg. Chocolate Pudding mix
2 T. Cocoa Powder
1 3/4 c. Milk
2 Eggs
1 1/2 c. Chocolate Chips

Bake at 350 for 55-60 minutes or until inserted toothpick comes out clean.

When cooled for 10 minutes add the drizzle.

Dark Chocolate Drizzle

1 c. Powdered Sugar
2 T. Cocoa Powder
1/2 tsp. Vanilla
2 T. Milk

Mix all ingredients together in a bowl.

Drizzle the chocolate over the cake.
Layer more chocolate over top, then more until all chocolate drizzle is used.
(See the layers of drizzle in the picture? LAYERS OF CHOCOLATE! It's BEAUTIFUL!)

Cut and serve!
Scrumptiously rich... Mmmm.....
