Applesauce Bran Muffins

This was originally a recipe with butter or oil, I forget I threw the recipe away for this one! My wonderful mother in-law suggested I make them healthier and put applesauce instead of butter. I thought, "why not?, lets give it a try!" There is no way I am EVER going back. These are more rich, moist and dense. We love them for breakfast or a snack and they're always a big hit with company too. DELISH!



Applesauce Bran Muffins:

1 1/2 c. Wheat Bran
1 c Flour
1 c. Milk
1/3 c. Applesauce
1 egg
1 tsp. Baking Soda
1 tsp. Baking Powder
2/3 c. Brown Sugar
1/2 tsp. Vanilla


Mix all ingredients together in a mixing bowl. Place muffin batter into cupcake pan with paper liners. Bake at 375 for 15-20 min. Drizzle with honey and eat up! DELISH!

*If there are left overs freeze them and take them out for a quick breakfast or snack!

Lemon- Orange Creamsicle Jello

This is one of the most delicious and refreshing desserts you will ever have. This is fabulous in the summer for barbecues, or a lighter dessert for any occasion. I've made this for years and have never had negative comment or a ho hum. Try this for the love of decadent and fresh desserts.




Lemon- Orange Creamsicle Jello

3 1/2 c. Boiling Water
1 Large Pkg. Orange Jello (sugar free works just as great as regular)
1 Large Pkg. Lemon Cook and Serve Pudding and Pie filling

Add 3 1/2 c. Boiling water to the jello in your 9x13 pan and dissolve completely.
Cook your Lemon Pie Filling according to pkg. directions. Pour into the jello and water mixture and mix thoroughly. Let set in the fridge uncovered until it cools, then cover with plastic wrap. When set and ready to eat, you can frost the jello with cool whip or just dollop certain pieces, its up to you.

*Great to make a day before guests arrive, then you can just pull it out when ready to eat.


 Pour the dry Jello mix into the glass pan. Pour the boiling water into the pan and dissolve COMPLETELY

Make Lemon Pie Filling according to pkg. directions and pour into the dissolved orange jello
 Using a whisk, combine both Jello and Pie filling until "one solid color"




When done mixing, let cool in the refrigerator. Cover when steaming stops.

Orange Grapefruit Juice

Need the ultimate Vitamin C jolt for your morning? Try this! This is a delicious tangy juice you will love. If you love oranges and you love grapefruit this is for you!


Grab your juicer you hardly ever use and grab a pink grapefruit and an orange. 
Don't forget to take the peel off (if you leave the peel on, the after taste is like you have just crunched a Vitamin C pill in your mouth! Ewww! Believe me I have done it!). Its always faster for me if I use a knife and cut the peel off. Stick your now peeled grapefruit and orange in the juicer. 
When it comes out, stir stir stir and drink drink drink! DELSIH!

*if its too bitter for your taste buds add half an apple to make it sweeter

Best No-Bake Cookies

This is my dad's recipe "tweaked" of course but the best no bake cookies in the world! We always put a little extra peanut butter in them to make them taste better and they set up faster! The faster they are done, the better! This is probably our favorite cookie recipe because we can half it for just a few cookies. We make this at least once a week. They are our favorite in the summer, we don't have to turn on the oven which makes our house hot hot hot! Grab a pot, make them, grab a glass of cold milk, and watch a movie or play a game! Fun family and friend time is calling!




Best No-Bake Cookies EVER

In a medium sauce pan-
Mix and bring to a boil:
1 c. Sugar
1/2 T. Butter
1 T. Cocoa Powder (Hershey's is the best, we have tried Nestle Toll House and its not as "chocolatey")
1/4 c. Milk (Almond or Soy Milk for Gluten Free)

Remove from heat and add:
dash of salt
1/4 tsp. vanilla 
(heaping) 1/2 c. creamy or crunchy peanut butter 
(creamy makes them smooth and luscious, crunchy adds a delicious peanut crunch to the cookie, whatever your taste buds desire)
1 c. Oatmeal (original or quick, both are great)

Mix all together and drop by spoon fulls onto freezer paper or parchment paper, we have found they work better than wax paper. Let cool a few minutes (as long as you can stand). Peel and eat with a glass of cold milk! DELISH!

Orange and Green Birthday Card

This cute orange and green birthday card is super fun, and super easy. It's unisex and a go to pattern for me. The ribbon makes it 3D and the layers add dimension. 
Make one and make someone's birthday a little brighter.


*When putting ribbon on a card here is a little trick. As you can see I put a piece of green scrapbook paper under it. Before attaching your ribbon or paper to the card, take your cut and measured strip of paper and place your ribbon on the "good side" of the paper. You should have the ribbon a little longer than the strip of paper. Take your ribbon and fold the small amount of excess ribbon over the 2 sides of the paper. Glue the ribbon down to the back of the paper strip (I use glue dots). Then glue your now combined paper and ribbon onto the card, this way you don't have a raw ribbon edge that frays. 

*One of my favorite thing to do is to stamp the same stamp I used on the envelope as I did on the card. It makes me excited when I get cards like that because I already know they are going to be good.

Ultimate Veggie Soup

Being sick this week with a "spring cold," left me with no choice but to make soups. I am a soup maniac anyway so I don't mind. I made a delicious veggie soup that can cure your hunger and feel good on your sore throat. If any of you are sick too, this will help.




Ultimate Veggie Soup:

4-6 c. water
1 c. cut green beans (ends cut off)
1 large carrot (peeled and sliced)
1 med/large potato (peeled and cubed)
1/3 c. frozen or fresh peas
1/2 onion (minced)
1 can petite diced tomatoes (dump the whole thing in, juice and all)
1 tsp. salt
1/4 tsp. onion salt
1/3 c. elbow noodles
4 cubes beef bouillon
1/2 c. Motts tomato /vegetable juice or V8 Juice
1 can Kidney beans (rinsed and drained, optional)

Combine all ingredients in a stock pot in order. Simmer on medium high until green beans are soft and elbow noodles are done. Salt and pepper to taste. Garnish with a dollop of sour cream. DELISH!
