I have grown up with this Sweet and Sour Stir Fry. It has been a family favorite long before I was ever born. This recipe came from a lady my grandma knew named Marie Ota. She was a Japanese immigrant and made this for my grandparents. They loved it of course and asked for the recipe. It's been in our family ever since and now I would love to share it with you!
Sweet & Sour Stir Fry
1 lb. chicken - cut into bite sized pieces
In a large skillet place 1-2 T. Olive oil and add chicken, cook slightly then add:
1 tomato -cut into cubes
1 green pepper - cut into pieces
1 can pineapple tidbits- drained
Place lid over top and let steam until veggies are cooked yet crisp and chicken is cooked through. While the large skillet of chicken and veggies are cooking prepare the sauce.
In a small sauce pan make your sweet and sour sauce, cook over medium low heat stirring constantly:
3/4 c. sugar
1/4 c. soy sauce
1/3 c. white vinegar
2/3 c. water
3 T. Corn Starch
1 T. Ketchup
When when sauce is thick and "glossy" pour over cooked chicken and veggies.
Serve over brown rice. Delish!
