We are TOTALLY making these for Cinco De Mayo on Sunday. They are easy and delicious! Here is a fabulous way to have everyone make their enchilada their own way but cook them all at once. I love keeping things simple, and let me tell you, this is SIMPLE! We took turns making our enchiladas the way we liked on the cookie sheet, rolled them up, poured sauce over top and sprinkled with cheese. Bake for 5 -10 minutes and broil for another 5 minutes. PERFECTION is what it was! Not soggy at all. Take a look! We are making them again tonight for dinner! YUM!
Oven Broiled Enchiladas
Shredded Mozarella Cheese
Favorite Enchilada Sauce
Fat Free Refried Beans
Optional : Copy Cat Cilantro Lime Rice (We love this rice inside!)
Preheat oven to 400. Grease a cookie sheet. Place a tortilla on the cookie sheet. Place the desired amount of black bean chicken, cheese, refried beans, and rice. Roll the enchilada up and place it seam side is DOWN. When finished with all the enchiladas pour your favorite enchilada sauce over all. Sprinkle mozarella cheese on top. Bake the enchiladas for 5-10 min to be sure its heated through. Turn oven to broil, and broil for 5 min. Keep a close eye so the cheese doesn't burn. Garnish with lettuce, sour cream, salsa and a squeeze of lime.
