Peanut Butter Oatmeal Apple Bit Cookies

I was so excited to try these cookies. They turned out delicious- almost like a peanut butter apple pie in your mouth! I made the apple bits extra small so it didn't take over the cookie. These were scrumptious! I can't wait to make these in the fall! I believe in some cases, less words is more and I think this is one of those cases! These cookies were divine! Check them out!




Peanut Butter Oatmeal Apple Bit Cookies

1/2 c. Apple Sauce
1/2 c. Creamy Peanut Butter
1/4 c. Brown Sugar
1/2 tsp. Baking Powder
1/2 c. Sugar
1 egg
1/4 tsp. Baking Soda
1/2 tsp. Vanilla
1 c. Old Fashioned Oats
3/4 c. Flour
1/4 c. Tiny Apple Bits (wash and peel the apple before dicing it)

In a medium bowl combine applesauce, peanut butter, egg, vanilla and apple bits. In another bowl combine brown sugar, baking powder, sugar, baking soda, oats and flour. When done, add together and mix well. Place by rounds on a greased cookie sheet. Bake at 350 for 8-10 min.

  2. These made about 2 and a half dozen cookies. I like to make the cookies a little smaller so you feel like you have more. xo-Brook

  5. What kind of apples do you recommend? Green ones for tartness? Or red apples for something more "soft?"

    1. We used red apples for a little sweet and they were very soft and chewy. Green would definitely be more tart but I am sure it would be just as good! xoxo

    1. I would not suggest using a cookie cutter. The dough is to moist to roll out. Thanks for asking!
