Banana Bran Pancakes

I told you I would keep popping out recipes with bran in them. And these are a hardy addition. They stay with you for a long time! I love good breakfasts that make you full and not hungry 20 min later. My little girl LOVES these for breakfast. She is a bad eater when it comes to breakfast but she normally has 2-3 every time I make them. So I make these A LOT. I make them and then refrigerate the left overs so I can pull them out for a quick snack with a swipe of peanut butter or for another breakfast. These are definitely a staple recipe in our house! Maybe they will be for you too!




Banana Bran Pancakes

1 mashed ripe banana
3/4 c. Flour
1 T. Sugar
2 tsp. Baking Powder
Dash of Salt
1 egg
3/4 c. Milk
3-4 T. Apple Sauce
1/4 Heaping cup Wheat Bran

Combine all ingredients in a bowl, and mix thoroughly. Heat your pan over medium heat. Lightly grease the pan and drop the batter onto the pan to desired size for a pancake. Spread the batter THIN! These puff up A LOT! When bubbles start to form on top of the batter- flip. Cook evenly on both sides. Garnish with butter and syrup, or Strawberry Breakfast Frosting. Enjoy!

  3. I just tried making these for my 5 daughters and they were a hit! The whole family loved them. I also added chopped walnuts to some of the pancakes (as some of my girls don't like nuts) and they were wonderful with the nuts as well. Right after I put the batter on the griddle, I just sprinkled walnuts on top, and then flipped them over, and the walnuts stayed in the pancake. I am not a big pancake lover, but these are great!
