Berry Blast Muffins

These Berry Blast Muffins are perfect for your 4th of July celebration. I know I will be making these for breakfast! They were an AWESOME blast of sweet and tangy fruit in your mouth in a delicious muffin. Who could want any more? These are my little girl's new favorite. When we opened them they looked Tie-Dye! So fun! Check it out!

Berry Blast Muffins

In a small bowl combine:
1 Egg
(Heaping) 1/4 c. Applesauce
1 tsp. Lemon Juice
1/4 tsp. Vanilla Extract
1 c. Milk

In another bowl comine:
1 1/2 c. Unbleached Flour
1/2 c. Wheat Flour
1/3 c. Sugar
1 T. Baking Powder

Combine both mixed bowls and mix well. Gently fold in the berries.

1/2 c. Strawberries
1/2 c. Blue Berries

Line a 12 cup muffin baking pan with paper liners. Fill the liners 2/3 full. Bake at 375 for 18-20 min. Until golden around the edges.
