Chicken Bruschetta Bake

Here's a twist on a classic. This Chicken Burschetta Bake was AWESOME! I've recently been looking for more recipes that don't have creamed soup as a base for casseroles, (it seems like ALL of them do!) This one was AWESOME! Stuffing mix, chicken, diced tomatoes, and mozzarella cheese- YUMM! Check it out!



Chicken Bruschetta Bake

1 (14 oz) can Diced Tomatoes - undrained
1 box Stove Top Stuffing
1/2 c. water
1 lb. diced chicken - sauteed in 1 T. olive oil - leave a little pink in the middle
1 c. shredded Mozzarella Cheese

In a bowl mix the stuffing, diced tomatoes and water. 
Place the " half-way cooked" chicken in a casserole dish or a greased 8x8 pan. 
Sprinkle the cheese over the chicken. Pour the moist stuffing mix over the chicken.

Cook at 375 for 20-30 minutes or until chicken is cooked through.
