Banana Oat Bars with Peanut Butter Frosting

What do you think about these bad boy? This is one of my most favorite desserts I've concocted in a long while. Talk about a BOMB! It was FABULOUS! We try to stay light on the number of desserts we have every week. We always have a dessert on family night- Monday, and either Friday or Saturday. So when mom makes a dessert, its a BIG deal. This was just the treat to satisfy our taste buds for a whole week! DELICIOUS!

Banana Oat Bars

1 1/2 c. Flour
1/2 tsp Salt
1/2 tsp. Baking Soda
1 tsp. Cinnamon
3/4 c. Brown Sugar
2 c. Quick Oats
3/4 c. Chopped Walnuts (if desired)

2 Eggs
3/4 c. Apple Sauce
3 Medium Bananas (Mashed)
1 tsp. Vanilla Extract

Mix all dry ingredients together in a large mixing bowl. Mix all wet ingredients in another mixing bowl. Combine the dry and wet ingredients and mix together. Grease a 9x13" pan. Pour the Banana Oat Batter into the pan and spread evenly. Bake at 400 degrees until golden brown. About 20-25 minutes. Let cool in the pan.
When cooled, spread Peanut Butter Frosting all over the top.

Peanut Butter Frosting

2 1/2 c. Powdered Sugar
3 T. Soft Butter
1/4 c. Milk
1/4 c. Creamy Peanut Butter

Add all ingredients in a bowl and mix with a hand blender until smooth. DELISH!
