Broccoli Cheddar Bacon Muffin Tin Quiches

This is delicious and fun for any brunch or breakfast. We made these Mini Muffin Tin Quiches Christmas morning! They were a HUGE hit, tested and approved by children and adults. 
We made my original Mini Muffin Tin Quiches with just ham and cheese along with these bad boys! Some preferred the originals while others ranted and raved about these. It's up to you! This is the great thing about these muffin tin quiches, you can put whatever "add ins" you want! Check it out!

Broccoli Cheddar Bacon Mini Muffin Tin Quiches
(makes about 12 muffins)

Frozen Shredded Hash browns
8 eggs beaten
3/4 c. milk
1 tsp. Salt 
A few Dashes of Pepper
about 1 tsp. bacon bits each muffin cup
Cheddar Cheese Crumbs or small cubes
1/2 c. chopped Broccoli Florets (I used frozen broccoli florets they worked GREAT!)

Brown your hash browns in a large oiled skillet- then place in your muffin tins.
Place frozen hash browns in your well oiled muffin tin about 1/3- 1/2 of the way full. Bake at 400 for about 10-15 min. until edges are browned. 

*(when hash browns are done, spray some more cooking spray inside muffin tins to prevent eggs from sticking to the sides)

Beat eggs, milk, salt and pepper all together until smooth. Add the chopped broccoli, cheddar, bacon bits etc. on top of the cooked hash browns. With a 1/4 c. measuring cup scoop out egg mixture and fill the cups.

Bake at 350. Bake for 15 minutes or until eggs are firm. 

*For easy removal, take a butter knife and scrape around the quiche and the tin, it should come out easily. 
Salt and pepper to taste

-Sun Dried Tomatoes
-Ham bits
-Parmesan Cheese
