A little Crock Pot Crazy? Yes, that is me all the way! I love to make most of my meals in a Crock Pot. I especially love to make Pulled Pork in the Crock Pot. It is one of the easiest recipes I have.
I have made this recipe for many people and they always ask me for the recipe!
So here it is! Come and get it- the Best Pulled Pork in town!
Crock Pot Pulled Pork Sandwiches:
1 lb. Pork Loin
1 c. Favorite Barbecue Sauce (We love Sweet Baby Rays)
2 1/2 T. Apricot Preserves
1/2 c. Water
In a greased crock pot place pork loin in the middle. (if meat touches the sides it cooks faster) In a bowl, combine barbecue sauce, apricot preserves and water and pour over the pork. Cook on Low for 8 - 10 hours. The longer it cooks the sweeter it is. (literally) Shred the pork in the crock pot so the sauce is evenly distributed to all the shredded pork. Serve onto wheat buns and garnish with a little bit of shredded cheddar cheese. DELISH! We love this meal with our "Skinny Sweet Potato Fries" and "Cole Slaw."
*Easily doubled and tripled for large groups, and is great to freeze left overs!
Sweet Baby Rays is the way to go! Looks absolutely delicious! Mmm!
