Skinny Sweet Potato Fries

These Skinny Sweet Potato Fries are wonderful for barbecues, dinner and lunches. We love to make them with Pulled Pork Sandwiches. They are easy and taste great!





Wash and peel your sweet potatoes. Cut them into fry "strips." Put in boiling water and boil for about 4 min. (They are done when they are tender when poked with a fork but don't fall apart) Place the fries on a greased cookie sheet. Put on the top rack of your oven. Set oven to Broil and bake until browned and crisp on one side. Pull them out and rotate the fries about every 5 min.(depending on how fast your oven cooks) All sides of the fries should be browned or crisp.  Sprinkle a little salt on top and dip in your favorite ranch or blue cheese sauce and gobble up!
